spritzies

(recipe from cookies doubled)

total haul: ~14 dozen
husbanded: ~2 dozen
net haul: ~12 dozen
bake time: 8 minutes
notes: less a tablespoon or two of flour. don't use insulated baking sheets.

This recipe works fine on insulated sheets and is perfect in every way. The cookies are SHORT because there's no liquid, so they're never tough, no matter how many times you have to re-load the cookie gun with dough that inexplicably ends up on top of the disk instead of under it. Maybe the barrel of my 25-y.o. cookie gun is warped? Anyway:

NORWEGIAN SPRITZ COOKIES

8 hard boiled egg yolks, mashed.
1 lb softened butter
1 cup sugar
1 tsp almond flavoring
4 cups flour (sifted)

Cream butter, adding sugar gradually. Press the egg yolks through a sieve. Add egg yolks and extract to creamed mixture. Add
flour slowly, mixing well. Use this dough right away -- if you refrigerate it or wait, it'll be too stiff to press through the cookie gun.

Using a cookie gun, press onto parchment-lined baking sheet. They can be close together because they don't spread much. Decorate however you like. Bake at 400 degrees until the edges are JUST brown.
